Chardonnay – California
100% Chardonnay, sourced from Lodi and Clarksburg, California. Those two AVAs sit on the south side of the Sacramento Delta. The strong, cooling, Pacific breezes mitigate the high afternoon heat and allow for ripe fruit flavors with even, slow-building sugars. Green harvest may be done to concentrate the flavors.
The fermentation follows two paths:
1/ Select grapes are hand harvested and pre-selected for malolactic fermentation; they account for about 2% of the total. They are fermented and aged for 4 to 6 months in 75 year old redwood tanks with American oak staves, each about 15ft long, fitted inside.
2/ The remainder of the crop is machine picked for a classic stainless steel fermentation.
This process results in a wine with great fruit, and just enough creaminess on the finish. Elegant apple and lemon notes with hints of green pears and soft white flowers aromas. 13.4% alcohol.
