This Méthode Traditionnelle from the western Loire is a blend of 70% Chenin Blanc and 30% Chardonnay, from vines between 18 and 30 year old. Each is vinified separately, at very cool temperatures to capture the delicate aromas. The bottles are left 15 months “sur lattes” (on the fine lees) before disgorging, which develops a level of complexity not usually found in wines from this region. 7 grams of dosage. A bold and fruity sparkling with great acidity.
About the Producer
Situated in the south of the Saumur region, Domaine du Vieux Pressoir was bought early 2015 by Claude Vagnon, a retired industrialist. The winemaking is currently in the hands of Frédéric Etienne, who previously worked at Château des Noyers in Anjou. During his agronomical engineer studies, Frédéric spent a month in California to study the technique of skin contact for white wines and benefit from the research conducted on that subject by UC Davis.
At Domaine du Vieux Pressoir, all stages of the vinification process are subject to meticulous care and attention, resulting in wines of exceptional quality. The estate spreads over 26 hectares planted with Chenin Blanc, a little Chardonnay and Cabernet Franc.
Farming/vinification practices: the domaine is certified HVE and certified organic since 2024. The wines are to this date vegan.
