Jozen Mizunogotoshi is Shirataki’s brand for their modern, precision sakes. Jozen is one of the most popular premium sake brands in Japan. “Pink”, bottled in eye-catching rose-colored bottle, is a Junmai Ginjo aged at a low temperature for two years. (Please note that the bottle is pink, but the sake is pale straw colored with just a hint of rose, much like a Pinot Gris.)

While aging, this palate-coating, medium-dry sake develops complex, savory caramel notes, along with bright tangerine, white peach, and an almost salty minerality. The savory, unctuous qualities are reminiscent of an aged Rheinhessen Riesling. This is a perfect cold-weather sake, which shows well either chilled or warmed.

About the Producer

Shirataki brewery was founded in 1855 by Minatoya Tosuke. It was started as an Izakaya (Sake Pub) in Echigo Yuzawa, a town nestled in the mountains of Niigata-Prefecture, an area where inns offering travelers the treat of a hot-spring bath flourished. The town is known throughout Japan for heavy snowfalls. The humidity and cold are moderate during the winter, ensuring ideal conditions for controlling bacteria growth and slowing fermentation. The onset of winter brings the peak of the brewing process and when the snow melts, high quality clean water gushes from the wells into the brewery. Thanks to the expertise of Echigo Toji, the master brewer, Shirataki sake has complex aromas, and is delicate, smooth and soft on the palate.
