The brewery’s home region of Iga, Mie Prefecture, is the birthplace of Ninjitsu, the art of the Ninja. (Interestingly, the Ninja Museum of Igaryu is located close to the brewery.) This Tokubetsu Junmai is exceptionally dry, rich, and savory, making it a perfect match for the region’s rich stews. This sake’s savory qualities are similar to a Left Bank Bordeaux or drier style of Mendoza Malbec.

About the Producer
Wakaebisu was established in Iga, Mie prefecture in 1853. Wakaebisu is an artisanal brewer in a region with a long-running agricultural importance. The Mie prefecture at one time was the sole source of food for the Emperor. The brewery is a benchmark for traditional Mie-style, very savory sakes.
