Imathia – Ayehoros
80% Xinomavro and 20% Merlot from Polla Nera, Vantos. The grapes are harvested early September for the Merlot and towards the end of September for the Xinomavro. The only intervention that is done is the addition of a very small amount of sulfur dioxide. No added yeasts or enzymes, no filtration, no clarification etc. Extraction for 6 to 8 days in stainless steel tanks. Aged in 225l French oak barrels of 2nd up to 6th use. Kostis Dalamara has been making the wine entirely since the 2011 vintage. Clean and delicate aromas of cherries, wild strawberries, raspberries with hints of cinnamon and tomato paste. Light body, medium to high acidity, well-structured tannins. 12.5% alcohol.
About the Producer
The Dalamára's family winery is located at the entrance of Naoussa, Central Macedonia, northern Greece. Its 5.3 hectare of vineyards are on the eastern foothills of the Vermio mountains. The owner, Kostis Dalamára, is continuing a tradition of five generations which began in 1840 when the family started to produce wine and tsipouro. He studied enology in Beaune and worked in Gevrey-Chambertin, Alsace, Roussillon and Catalonia. A new building has been constructed next to the traditional winery, with the tsipouro distillery, to house the winemaking facilities. The total production is 25,000 bottles.
