100% Chardonnay from estate plots located in Villeneuve, Vertus, Oger and Mesnil-sur-Oger, with vines averaging 40 years old. The grapes are all hand-harvested. The wine is aged for 3 years and bottled with a 8g/l dosage. The “Bulles de Craie” offers floral and fruity notes dominated by citrus fruits. It is lively, with a hint of salinity reminiscent of oyster shell and a touch of the chalky terroir its name evokes. A lot of purity and grace in this bright cuvée. 12.5% alcohol.

About the Producer

Champagne Claude Cazals is run by the ebullient Delphine Cazals; her house is attached to the winery, and Delphine’s mother lives in the château inside the Clos de Cazals. The estate was founded in 1897 by Ernest Cazals, a cooper from the south of France. He was Catalan, hence the name, same as the renowned cellist, Pablo Casals (pronounce the “s”). He moved to Champagne where he met his wife, and together they created a Champagne house in Le Mesnil-sur-Oger. Since then, three generations of wine-growers - including Delphine’s father Claude Cazals, who invented the gyropalette in 1969 - have followed each other at the head of the winery. This small family estate has the status of RM (Récoltant Manipulant) and produces around 5500 cases per year.

They own 10 ha of vineyards, all planted with Chardonnay and located in 4 villages in the Côte des Blancs, south of Epernay: Le Mesnil-Sur-Oger, Oger, Vertus and Villeneuve. The Clos Cazals in Oger is the largest of the 21 clos in Champagne at 3.7ha. It was planted in 1957, years after Olivier Cazals bought the house from United Nations Founder and Nobel Peace Prize winner Léon Bourgeois. However, it was Delphine who noticed that this walled-in vineyard was consistently their best, obtaining a full degree higher than their other parcels; she petitioned the Comité to have this vineyard designated a clos and won the right for her 1995 vintage. She was especially proud because no one else in the family supported her efforts. The Clos Cazals is divided in two parts with the oldest vines in the Clos Cazals and the younger vines—about 25 years of age—in the Chapelle du Clos, a parcel which surrounds an ancient chapel on their property. A few other plots in Le Mesnil-Sur-Oger are ranked Grand Cru. The rest is ranked Premier Cru. The house Blanc de Blancs Champagnes have delicacy, aromatic power and the capacity for long aging.
