Santiago Roma founded his domaine in 1997 in Pontevedra (Val do Salnés, Rías Baixas) on his family land. He exclusively produces Albariño from the 6 hectares of estate vineyards he planted and an additional 6 ha of plots he rents and farms. The winery was created in the old farmhouse of his great-great-grandparents. He is now considered one of the leading small producers of Albariño for his complex, terroir-driven wines.
Farming/vinification practices: organic, not certified. Santiago uses sheep, chickens and geese to weed the vineyards. Only native yeasts are used for the fermentation. The wines are aged on the lees for several months to gain texture.
