Spirit Type Whisk(e)y

Made from 2/3 Virginia rye and 1/3 thoroughbred Virginia barley, hand malted on the floor of a custom malting room at the distillery and kiln-dried with applewood and cherrywood smoke. Having control over the malting process allows Copper Fox to develop and maintain a connection to the grain throughout the entire production process. It is then double pot-stilled to between 150 and 160 proof and aged (18 months) in used bourbon barrels with toasted apple wood and oak chunks placed inside the barrels. The spirit is non-chill filtered to preserve the complete flavor and essence of the barley grain and is bottled at 90 proof (45% alcohol). It results in a truly unique rye whisky that is savory and complex with the characteristic Copper Fox finish. A great crossover for Bourbon drinkers, with a subtle smoke influence.

Notes of earth, spice, buttered biscuits; figs and caramel balance the smoky qualities in a tasteful way. Enjoy neat or in a classic cocktail such as an Arnaud’s Special.

About the Producer

Rick Wasmund started Copper Fox in 2005, the first distillery in North America to build a malt floor and kiln since the repeal of Prohibition. The operation is based in Sperryville, Virginia. The revelation of a distinct and wonderful single malt whisky using fruitwood smoke came to Rick in years prior after visiting a slew of American micro- distilleries. By spring of 2000, Rick made the journey to Scotland to visit several distilleries. He came away with an offer to intern at Bowmore Distillery on Islay, one of the few distilleries in the world that still malts their own barley. A few years later, Copper Fox Whisky was launched into the marketplace as the first apple and cherry wood smoked whisky in the world. These distinct whiskies focus on the time honored, but currently rare hand malting process, using the smoke of smoldering fruitwoods during malting. There are three products, which are all based on grains from a local farm on the northern neck of Virginia between the Potomac and Rappahannock rivers.
