100% Chardonnay aged 8 months on the lees.

Manual harvest and bunch selection. Alcoholic fermentation in stainless steel tanks at controlled temperature (53°F – 59°F) followed by a second fermentation in the bottle for 3 months. Once this second fermentation is finished, the wine is left to rest with stirring of the lees for 8 months, in order to add texture and complexity.

Fine, constant and persistent bubbles. Intense aromas of tropical and citrus fruits, accompanied by buttery and yeasty notes of brioche. A dry sparkling with refreshing acidity, full body and a great persistence. 13.3% alcohol. 3000 bottles produced.

ABOUT THE PRODUCER: Tresparauno

Tresparauno is born from the passion of three friends to do something different, the idea of ​​breaking paradigms and the motivation for continuous improvement.

  • Cristina Pino, a Spaniard wine maker, with a PHD in Oenology and many years in Baja under her belt.
  • Sergio Heras, originally from Mendoza Argentina, where he studied oenology and received a degree from Juan Agustín Maza University. He arrived in Mexico in 2015 and has been working as a consultant ever since.
  • Daniel Lonnberg, originally from Santiago de Chile, where he studied Agronomy and Oenology at the university. Mr. Lonnberg comes from a culture in which good wine had to be part of every reunion. He came to Ensenada to do the harvest a couple years in a row, and had the chance to appreciate the richness of this place, its people, its local products, and the huge potential of Guadalupe’s Valley.
