100% Giró Ros, a pre-phylloxera autochthonous Mallorcan grape. Its very low yields and complex viticulture almost led to its disappearance. Harvested in two passes, a few weeks apart, in search of two antagonistic profiles. The first pass provided verticality, the second structure and body.

Harvest: 14 & 25.08.2023. The grapes were pressed at low temperature. Fermentation for 6 weeks in large first-year French oak barrels, using both indigenous and commercial yeasts. Light fining and light filtering before bottling.

Notes of spices, pineapple (an aroma typical of this variety) and ripe apples. Great structure, extraordinary freshness, very long finish. Alcohol: 13,1% vol. 4,500 bottles.

ABOUT THE PRODUCER: Oliver Moragues

The Oliver Moragues family has owned the estate since the 16th century. In the middle of the 20th century, Gabriel Oliver Ribas de Pina consolidated and modernised all the family’s wineries; he improved the winemaking process and began bottling all the wines.

The vineyards are located 265 meters above sea level on a hill, on the plateau of the “Pla de Mallorca”. The soil is deep calcareous-clay of marine origin from the Quaternary period. The vineyards benefit from a unique microclimate and constant sea breezes known as ’embat’. They are planted with indigenous varieties: Giró Rós, Moll, Gorgollassa, Callet and Manto negro. The grapes are hand-harvested in boxes of less than 10 kgs.

Farming practices: Certified Organic. The 50 hectares of pine and holm oak forests surrounding the vineyards provide ideal biodiversity. The bats control the insect population, the nettle is used for biodynamic preparations and the forest creates a humidifying effect. 

Vinification practices: The winery is located among the vineyards, so the time between harvest and entry into the tank is minimal, thus preserving all the freshness of the grapes. Three types of vessels are used: stainless steel tanks, large-format French oak barrels, and amphorae. The winemaking strategy revolves around three pillars: the pursuit of freshness, varietal expression, and elegance.



Ancient local grape varieties distinguish this ancient estate. Biodynamic practices were established in 1990. Today Winemaker Carlos Cabeza Oliver produces eight organic-certified wines featuring these indigenous varieties.
