Kit’s Killer Cab Cabernet Sauvignon is a blend from two Estate Vineyards – Cold Springs and Croquet. Both sites are located in the Howell Mountain AVA, in the Vaca Range above 1440 ft elevation, north east of the Napa Valley. Situated above the fog line, the volcanic soil and climate of Howell Mountain make this the perfect location for growing ultra-premium Cabernet Sauvignon.
Hand harvested in the cool morning hours, the fruit is hand sorted before and after the destemmer. After a 3 day cold soak, the juice is inoculated with cultured yeast. During fermentation, temperature and extraction are carefully managed. The wine is then pressed off the skins and placed in French oak barrels (70% new) for 20 months of aging. Prior to bottling, the winemaker carefully blends from the Cold Springs and Croquet Vineyard (50/50) to produce this Estate Cabernet blend.
Earthy and savory with notes of violets, blackberry pie and black pepper. Excellent mid-palate with big, chewy tannins that fill the center along with ripe plum and bing cherry. A powerful and complex red wine that finished with mountain tannins and a kick of acidity. 14.8% alcohol. 700 cases produced.
