42% Cabernet Franc from Rancho Raygoza in Valle de San Vicente, 27% Lambrusca di Alessandria from Viñas Pasini in San Antonio de las Minas, 18% Nebbiolo and 13% Grenache from Viñedos Malagón in Valle de Guadalupe, all vinified and aged separately. 50% of the blend was vinified in open vats, 25% in stainless steel tanks, and 25% in open oak barrels. The Garnacha and Nebbiolo grapes were not crushed. The Cabernet Franc and Lambrusca di Alessandria grapes were macerated for a longer period. Fermentations were initially carried out with native yeasts then inoculated. Each batch was slowly pressed in a wooden hydraulic press. The wine was then decanted into oak barrels where malolactic fermentation took place; it remained in oak barrels for 12 months.

Fruity aromas of wild fruits, blackberries, red plums, sweet spices and leather. Juicy and smooth on the palate with notes of black cherry, hibiscus blossom, cocoa, spice and smoky red pepper. 14% alcohol.

ABOUT THE PRODUCER: Drosophila

Drosophila melanogaster, or the fruit fly, is a common presence in wine cellars as it is fascinated by fermentation processes, particularly those involving grapes. While the fruit fly may be unpleasant for many, the idea of embracing it as an inherent part of winemaking – something that has been linked to the early stages of the human-wine relationship – naturally allows it to be part of the process and fulfill its specific function within the system. Drosophila was initiated in 2018 by Jorge Uribe Ibarra and yields a small annual production of just 500 cases. Jorge embodies a philosophy centered on respecting the land, craft, and the natural environment. Jorge believes his job is to aid the grapes’ transformation into wine, but that he is not the creator of the wine. Winemaker: Jorge Uribe Ibarra
