Yeast: A cultured yeast whose strain is 120 years old.
Distillation: Distilled twice in Charente copper stills.
Water: From the purest Charente springs, naturally filtered for centuries through the limestone layers in the soil of the region.

Aging: For 3 to 5 years in Limousin oak barrels which have previously held Sauternes and Cognac.
There are no additives; only a touch a caramel is added for the color (less than 1%).

Tasting notes: A delicate nose with aromas of orange marmalade, dried apricots and gingerbread. On the palate, it is both dry and slightly fruity with recurrent notes of orange peel and dried fruits. Very delicate upfront, it opens up to notes of dry almonds and light spices. Subtle and refined smokiness on the finish. 40% abv.

ABOUT THE PRODUCER: Daucourt

Jean-Marc Daucourt was born into a family of cognac distillers in Angoulême, France. He inherited a passion for the art of distillation, and four generations of experience. The son of an Irish mother and a French father, he honed his craft as a young man in a famous distillery in Scotland.

After years of producing great Cognac, he partnered with his brother Edouard and his nephew Charles to branch out and create a unique whiskey, using the gooseneck pot stills of the family distillery, traditional to the Charente region.
