ABOUT THE PRODUCER: Dalamára
Considered one of the finest winemakers in Greece today, Kostis Dalamara is the 6th generation to work his family’s domaine in Macedonia. After training in Beaune and working at Trapet in Gevrey-Chambertin, Kostis sought to bring a Burgundian approach to Naoussa. His wines reflect an elegance not often found in the Xinomavro of his region. Alongside his wife Maria, Kostis farms 5.7 ha of mostly Xinomavro on clay-limestone soils on the eastern slopes of Mount Vermio, at 1150’ elevation. Kostis replanted some plots with the help of famed French soil scientist, Claude Bourguignon.
Organic since 1996 and biodynamic since 2008, the domaine is now completely self-sufficient. Kostis produces his own fertilizer on the farm and harnesses solar energy to power the winery. The horses, ducks, turkeys and other animals that roam the vineyards after the harvest assist towards developing an integrated ecosystem. Besides a miniscule amount of sulfur, there is no intervention on the wines. Kostis’s overriding philosophy is to produce wines that are the purest expression of their terroir.
