The brand name Nishinoseki means "Champion of the West". The sake brewing method of the old days can still be seen in the main brewery. The brewery is seeking the "tasty sake" in which the five component tastes of sake (sweet, acidic, dry, bitter and astringent) harmonize with each other. |
