Founded in 1673, the Kaika brewery has been the oldest brewery in Tochigi prefecture, for over 330 years. Sano, where the brewery is located, is a city abundant with water and the greenery of the Kanto plain. The brewery is surrounded by its own rice paddies. The brewers themselves go into the fields, where they cultivate the special Wakamizu and Omachi rice for sake brewing. The spring water is so pure that they have been named one of the 100 best waters in Japan. Well known special characteristics of Kaika sake include an aroma with the sweetness of ripened fruit, a rich flavor, and a lingering finish. |
