Testsuo Kuroi (Croix) set himself a mission to seek out the perfect wine to complement traditional Japanese food. He could find nothing to match his ideal.

So in 1979 he founded his own winery in Toriino, near Kyoto, the ancient capital of Japan, known as the cornucopia of delicacies. For centuries this small town has supplied ingredients for fine Japanese cuisine, with the widest diurnal temperature difference in Japan.

The ideal conditions of Toriino have finally enabled Tetsuo Kuroi to achieve his mission.

Plum Wine - Joshu haku
Joshu haku is made from Joshu hakubai, a rare and ancient variety of green plums grown exclusively in Kyoto. The plum is the size of a peach with a thick, juicy layer of pulp over a large pit.

The orchards are carefully nurtured to produce a limited crop each harvest. Yields are minuscule. Some of the fruit becomes luxurious traditional Japanese sweets. The rest is vinified into a superb plum wine with the natural clean, sweet and bitter flavors beaming in the glass.

This wine is not to be confused with ordinary Sake or Shochu infused with plum.

Only 1250 cases produced annually.

Alc: 9.5%

Tasting Notes:

Aromas of green plums, candied fruit with herbaceous notes. Off-dry on the palate but with refreshing fruity acidity.
