Founded in 1804, Tokushima prefecture. Narutotai special skill in Moto making (yeast starter), is called the Yamahai traditional method of sake brewing. The Yamahai method is a complex and time consuming natural procedure that does not use artificial additions. Recently, they also developed a new procedure, for the first time in Japan, called Tsuboyori, which means "selected". The rice is selected by hand after polishing. Each rice grain is checked one by one to make sure only the best grains to brew sake are used, giving the perfect balance of flavors and acidity.
