Established in Kochi-Prefecture, 1603. The brewery was started more than 400 years ago as a private sake brewer of the Sagawa castle master, Lord Shigeyoshi Fukaoizuminokami in Tosa, Kochi-pref. "Tsukasabotan" is known widely as "the dry sake of Tosa". It is said that you can’t talk about the Tosa sake without drinking it in the process. It is mentioned in the novel "Ryoma goes" of Ryotaro Shiba, as a symbol of the Tosa sake, “Excellent sake called Tsukasabotan in Tosa, leaves a slight sweetness in the mouth after drinking for 1 sho and half (2.7 ltrs.)”. There is Tsukasabotan brewery in the basin, Sakawa-cho, among the Shikoku mountain ranges. The 90 meters long white wall of the brewery, built in the late Edo era, still serves as a reminder of traditional dignity. Tsukasabotan sake is dry and smooth like water, with a well-balanced savory taste and a hint of citrus fruit flavor.
