I Pastini (the vineyards in local dialect) is located in the Valle D’Istria in the very heart of the “Murgia dei Trulli” From a small 7 ha vineyard planted in over 30 years ago near the town of Locorotondo in the region of Puglia, I Pastini produces a classic yet clean and expressive Primitivo.

Before harvest in early September the grapes are checked for soundness and are then left to wither slightly on the plant to intensify. The clay soils help make this extended hang time on the vines possible. The stems are removed before fermentation in temperature controlled tanks. The must ferments in contact with the skins for 7 to 8 days, before it is racked and kept to rest. The wine is then bottled unfined and unfiltered. Under 4000 cases are produced.
Intense ruby color with light hints of violet which becomes more garnet with age. The wine is full bodied with a velvety texture and notes of forest fruits. It makes and excellent match with roasted meat.
