Founded by Yves' grandfather in 1925, Chevalier cultivates choice parcels of vines between 30-50 years old without herbicides or fertilizers, following lutte raisonée. The grapes are hand selected in the vineyard and destemmed before undergoing cold maceration and a 15 day vatting. The emphasis is on the pure expression of vivid fruit. |
