| Roger Pouillon |
| Domaine Roger Pouillon is a small family -owned affair situated just north of Epernay and south of the Montagne de Reims, in the village of Mareuil sur Aÿ, which also boasts the presence of Billecart-Salmon. The Pouillon family is proud that their entire production is sold under their own label; neither grapes, wine, nor bottles are sold to négociants. Fabrice Pouillon is a third generation champagne producer whose approach is inspired by his grandfather. His quest for self–perfection has led him to train at Sauternes and at Chassagne-Montrachet, where he learned to master vinifying in oak barrels. He and his father practice what is called “culture raisonnée", an approach close to organic farming that eschews the use of chemical fertilizers, defoliants, and fungicides. Grass is allowed to grow between grape rows and the earth is turned periodically in order to encourage bacterial proliferation and diversity, which is eventually reflected in the expression of “terroir” in their champagne. Since 2003 Fabrice has begun to experiment with biodynamic methods on a few selected parcels of vines. |

| Rose Brut 1er Cru |
| This Champagne Rose is made from 100% Pinot Noir. 90% of the juice comes from the saignee method or bleeding of the tanks, which is unusual for Champagne. The juice macerates on the skins overnight, about 12 to 16 hours, to pick up a gorgeous pink hue and flavors from the skins. |
| Champagne Brut - Cuvee de Reserve |
| This classic blend is made from 80% Pinot Noir , 15% Chardonnay and 5% Pinot Meunier. A floral nose leading to fruits and nuts on the palate is balanced by fine bubbles and refreshing acidity. Gold medal winner at Macon. Wine Spectator: “Rich & toasty, dense flavors of fig & honey...hints of citrus” |
| La Fleur de Mareuil |
| Equal parts pinot noir and chardonnay from selected 1er cru sites on the Cote de Mareuil. Barrel aged 10 months.
A 50/50 blend of Premier Cru Chardonnay and Pinot Noir, this champagne is barrel-fermented and aged 10 – 12 months in 10% new oak barrels, with lees stirring. The wine is bottled unfiltered. This exceptional cuvée was created for the domain’s 50th anniversary in 1997 and is produced in limited quantities.
Awarded 94 points by The Wine Spectator and a “ Coup de Coeur “ from The Guide Hachette.
Wine Spectator: “Gorgeous. Complex and classy, it starts with aromas of coconut, whole-grain bread and spice. The flavors evoke lemon, honey and tobacco. Long nutty aftertaste. It’s all punctuated by lively acidity and a silky texture. Drink now through 2012. 333 cases made.” |
| 2Xoz |
| The concept for 2Xoz was to produce a top quality Champagne without the addition of saccharose (sugar). To accomplish this feet they needed to use grapes with a higher level of maturity, about 30% more than for classic Champagne.
Elodie and Fabrice Pouillon set about this task by selecting their best plot of old vines and worked this parcel entirely by hand, including severely pruning back for low yields. They worked an entire 15 hectare 1er Cru parcel in this way to achieve their goal, but in fact a second selection is then made from this parcel for just the best grapes. Their first offering is labeled Vintage 2004 and is 100% Pinot Noir from 47 year old vines. The wine was vinified in oak barrels with natural yeasts. Just over 200 cases were produced. The name is a play on words: 2Xoz is pronounced in French as "deux x oz" which sounds like Deux Hexose, referring to the fact that only natural sugars from two members of the Hexose family were used in the production of this fine and rare Champagne. |
